My kids were begging for homemade cookies last night!
Since we've clearly run out of oatmeal,
and apparently I haven't bought more,
Peanut Butter Cookies won out!
Here we go ... Heat oven to 375°
Mix 1/2 C Sugar, 1/2 C Packed Brown Sugar,
1/2 C Peanut Butter, 1/4 C Shortening,
1/4 C Butter (softened)
and 1 large egg in an electric mixer
Next, add dry ingredients:
1 1/4 C Flour, 3/4 t Baking Soda,
1/2 t Baking Powder, and 1/4 t Salt
Mix until it looks like this:
Next, put a few tablespoons of granulated sugar on a plate.
I didn't want to use the criss-cross fork method, so
we brainstormed and Brady brought this in from the bar:
Here's where size really does matter:
scoop out the batter and roll into 1 1/2" balls.
We ended up with about two dozen pretty good-sized cookies;
smaller balls could have doubled our end result.
Dip the glass (or the fork) into the sugar,
and press into each ball of dough.
Bake each pan for nine minutes; immediately
remove from baking sheet to cooling rack.
These were so good, we only had a half dozen left
this morning when I checked!
