Tuesday was the perfect day! Crafting with a friend,
her homemade potato soup for lunch,
dinner at Your Place,
a basketball game starring two of my favorite boys,
and to top it off ...
Baked Macaroni and Cheese for (second) dinner!!!
2 cups uncooked elbow macaroni, 1/4 cup butter
1/4 cup flour, 1/2 teaspoon seasoned salt
1/4 teaspoon coarse black pepper
1/4 teaspoon Worcestershire sauce
2 cups milk, 2 cups shredded cheeses
Heat oven to 350°
While macaroni is cooking, melt butter over low heat.
Stir in flour, seasoned salt, and pepper.
Cook over low heat, stirring constantly, until smooth and bubbly.
Remove from heat and stir in milk.
Heat to boiling, stirring constantly. Boil and stir one minute;
remove from heat.
Stir in cheeses. I used a jack and cheddar mix,
with some fresh shredded Romano cheese.
Stir until the cheese is melted (heavenly!)
Drain macaroni. Stir macaroni into the cheese mixture.
Transfer to a baking dish.
Bake for 20 minutes.
I like to turn the broiler on for the last few
minutes to really brown the top:
Delicious with fresh sliced tomatoes!
(and for breakfast ... Why, yes! I believe I will!)
