Simple Lasagna

Super Simple Lasagna

This is one of my favorites ... I can actually make
this without a recipe.  That's a significant accomplishment
for a chick with OCD and ADD!

Quick and Easy!!!
You can make it and eat it right away,
or put it together to bake later: refrigerate for 24 hours
or freeze for up to 2 months.

Note: If you're baking later, cover finished lasagna
with Saran wrap
and then tin foil.  Before baking,
remove Saran wrap and replace tin foil.

 Ingredients:
1 lb ground beef, cooked and drained
1 t coarse black pepper
1 t onion powder
1/2 t garlic powder
1 24oz jar Prego Traditional Italian Sauce*

*I experimented on dozens of lasagnas with
different jarred pasta sauces;
I always got the best results with Prego
and this specific flavor
Feel free to experiment or use your favorite
jarred sauce - it's your call.

1 16oz container small curd cottage cheese
2 T dried oregano
2 large eggs, whisked together
9 lasagna noodles, cooked and drained
2 C shredded mozzarella cheese
1/2 C shredded cheddar cheese

Add pepper, onion powder and garlic powder to
browned beef.  Stir in entire jar of sauce.

This is your Meat Mixture; set aside.

Spread cooked noodles out onto parchment paper
so they don't stick together.

Mix together cottage cheese and oregano.
Stir in whisked eggs; mix until well blended.
This is your cheese mixture; set aside.

Layer three noodles into bottom of greased
9"x11" baking dish.
Spread 1/3 of meat mixture over noodles.

Spoon 1/3 of cheese mixture over meat;
spread well.

Repeat layers: noodles, meat mixture, cheese mixture
until you've completed three layers.

Next,

sprinkle mozzarella cheese evenly over
top of lasagna.

Sprinkle shredded cheddar over mozzarella.

Cover lightly with foil.  Bake for 40 minutes.
Remove foil; turn on broiler -
broil for 5 minutes or until cheese is browned.

Remove from oven and allow to sit
for 10 minutes before slicing.

Perfect!!!
No runny sauce, no "leaky" cheese ...

Especially tasty with a thick slice of garlic bread!

It tastes even better the next day!
Enjoy!!

Peace
